Dr. Carol Henry appointed as Assistant Dean, Nutrition and Dietetics
Dr. Carol Henry has been appointed as the Assistant Dean, Division of Nutrition and Dietetics, in the College of Pharmacy and Nutrition, effective July 1, 2015 for a three year term.
Carol is an internationally recognized scholar-practitioner in community-engaged research, teaching and learning, who came to our College 15 year ago. She leads a multi-partner, multi-faceted research agenda on local and global initiatives aimed at addressing the determinants of and solutions to food insecurity and malnutrition. Her research program aims to build capacity and sustainability for health promotion and food security in Canada, Africa, the Caribbean and South America.
Carol’s most recent initiatives in Ethiopia, conducted in close collaboration with researchers in our College and at Hawassa University, involve a 3.85-million IDRC project to bring higher-yielding, more nutritious chickpea and bean varieties to more than 70,000 Ethiopian farming households. In addition, Carol and colleagues have secured a 2-year $100,000 Saskatchewan Pulse Growers’ grant aimed at incorporating local pulse crops into Saskatchewan childcare centre menus.
During her tenure, Carol has maintained an impressive teaching record, which includes the development of a new core course in Food, Culture and Human Nutrition, and a spring/summer Food Service Management Practicum. Carol has also spearheaded initiatives related to cultural competence for students, faculty and staff, and represents the College on the University’s Aboriginal Health Education Working Group.
